CARIBBEAN QUINOA

Ingredients

  • 4 tablespoons coconut oil
  • 1 cup finely chopped onion
  • 1 cup quinoa
  • 2 cups water or chicken stock, coconut water can also be used instead or in combination with
  • water or stock for more coconut flavor.
  • 1/3 cup raisins
  • 1/3 cup grated coconut
  • 1/2 cup crushed pineapple
  • 1/4 cup chopped cilantro
  • 1 cup of cooked or canned black beans, beans can be left out of the recipe
  • Salt and pepper to taste

Directions

Heat oil in a pot large enough to accommodate the cooked quinoa. Over medium heat, saute' the onions until softened, about 10 minutes.

Add the quinoa and stir to coat with oil for 1-2 minutes. Pour in the water or stock, then the remaining ingredients except the beans. Save some of the raisins, coconut, pineapple, and cilantro for garnish.

Simmer for 20-30 minutes, or until the liquid is absorbed. Add the beans. Allow the quinoa to rest, covered for 5-10 minutes before serving. Add ingredients for garnish right before serving.
